Being at the origin of the cheese fondue, the Swiss are experts in the field and have elevated it to a national dish. Raclette was invented by the Armaillis (Swiss shepherds) in the 19th century in the canton of Valais. Originally, the name was not "raclette" but "roast cheese" because the wheels were melted over a wood fire and scraped, hence the term raclette was born in the 18th century! In pure tradition, Swiss people eat plain raclette, accompanied by steamed potatoes, pickles, vinegar onions, not to mention freshly ground pepper.
